The Oil Refrying Project by student Vihana Desai focuses on designing a smart oil quality monitoring system. The prototype evaluates chemical and physical changes in cooking oil to estimate reuse count, classify oil as fresh, moderately reused, or unsafe, and clearly indicate consumption safety, supporting food safety awareness and healthier frying practices for homes, restaurants, and small food vendors globally.
